Should the user make use of java apps like netbeans or eclipse they allready make use of muliple cores. Along with the possibility of multiple users and possibly multiple OSes(Xen) or vitualization makes further use of multiple cores. Those are just the typical desktop, when we move the equation to Linux the OS it self implements multiple threads to do its work. The virus checker and spyware checkers that are using up still more cores. The OS that is defragmenting my harddisk.
